My supermarket has them on sale this week and I don't think I have ever cooked them...any ideas from you creative cooks out there...I suppose I could do what I did with roasting the larger chicken with rosemary et al but would love some suggestions.

In my past experiences, rock cornish hens are fairly tasteless. Therefore, it is critical that you add some flavor to the bird.

Personally, I would stuff the body cavity with a sprig of rosemary and onion and garlic inside the body cavity. Or you could add a lemon wedge.

I would use my finger to separate the skin away from the bresh. I would add some butter underneathe the skin.

Then season the outside of the bird.

Then cook the bird low and slow. If you have a smoker, it would be ideal.

I like to make them with orange marmalade for a glaze, sometime with ginger and red pepper

Google Rock Cornish Hens Recipes.... I too like them with an a L'Orange sauce or glaze... the rosemary would add a nice depth to that....

I have a rotisserie, we stick 3 of them buggers on & cook them that way.

But I have also baked them just like chicken. I stuff them with carrot, onion, garlic and celery...
I put a bay leaf or some rosemary under the skin, and salt pepper, poultry season, garlic powder and onion powder on top...and a light sprinkle of paprika and oregano.

I have been wanting to do them in my crockpot, but not sure how I'm going about it yet.
