wow, there are so many: nachos come to mind as this is a dish our granddaughter always brings and it is yummy but simple. I love to do stuffed mushrooms for pot lucks and the third is home made small egg rolls with 2 dips, one spicy and one sweet and sour. I could probably think of a dozen more but I am sure you will get lots of great suggestions.
In my personal repotoire: Stuffed mushrooms. A really good quality charcuterie plate. Guacamole (frequently requested by our friends). Trader Joe's frozen flatbread (sorry, but they are REALLY good). Cheese and sausage dip (which is a bit of a pita since it needs to be kept hot).
We have an annual NYE open house that ends up being 60+ people over a four hour span. I provide none of the food because, after the first year, I learned that most of our neighbors/friends will bring something. And it's WAY too much food. In the second year, I got smart and asked that people bring finger food only. I warned that forks would not be provided (but, of course, that's a lie. Somebodyalways brings something that requires a fork (usually cake), so I ship them out.
The things we get every year: Lil' smokies in some kind of sauce. Meatballs in some kind of sauce. Spinach dip. Artichoke dip. Queso. Bean dip (which nobody eats). Hummus (more and more each year, with resultant leftovers), cookies, fudge, candy (usually chocalates that are likely being regifted). pigs in the blanket, cold boiled shrimp with cocktail sauce, stuffed mushrooms. deviled eggs (this being the South, many different versions). Mozzarella balls and grape tomatoes on toothpicks, mini egg rolls, spanikopita, cheese plates, prosciutto wrapped around something. crab dip. Chips and salsa (always mild salsa, damnit). Guacamole. Wings. Satay. Samosas. Cut up raw veggies, mini quiche. Peppermint bark. Spiced/flavored nuts. Peanut brittle. Pinwheels. Bruschetta (the one with rare roast beef was a huge hit). Baked brie (put some honey on it, PLEASE). A cheese ball (which somebody uses twice and the rest is untouched). Mozzarella sticks (bad idea - they go cold quickly then taste awful). Chinese dumplings (same problem as the mozzarella sticks). Chicken salad and crackers. Tapenade. Pizza dough rolled with ham and cheese inside, cooked and sliced (huge hit).
No, I am not kidding. And I'm sure I'm forgetting stuff (like the homemade fried rice our barely English speaking Asian neighbors brought last year. Bring out those forks!)

Bake wonton wrappers in mini muffin tin and use as baskets for anything from chicken salad to shredded carrot salad. Brush the dough tips with olive oil or soy sauce.
