Good morning all. It is a dreary day in the mountains. Looks like rain.

DH is having ham steak with mashed potatoes and corn for dinner.

I am having more zucchini and squash. Oh yeah and oven fried eggplant with tomato sauce and mozzarella cheese.

I think I am becoming a "summer vegetarian", lol.

That thick slab of round steak I have got is going into the electric skillet to be browned in EVOO and then covered in tomatoes, onions and mushrooms. It will simmer on 225° until wife gets home. Not even thinking about sides yet as I will leave that to her imagination.

Last night I ended up having nadda for dinner. Tonight - maybe hummus and chips. Feeling punk and know I won't want to cook.

Tonight we are going out to eat! We are going to celebrate our 10th anniversary a day early since we both work tomorrow night. I told my husband he can pick the place so I'm sure we are probably going to go to a steak house.

I never got to have my lamb chops the other night... I ended up eating the leftover chinese food. So last night, I finally broiled them up after seasoning with salt, pepper, and garlic powder. Brioiled 4 minutes on each side. They're about 2" thick and I like my meat rare.

Cooked up some Near East Rice Pilaf with sun-dried tomatoes. YUM!!!

Took one summer and one zuchinni squash, cut them in half the long way and seasoned them with fresh cracked pepper, sea salt, and italian seaasonings. Broiled five minutes on each side.

I was stuffed and tonight I will enjoy those leftovers!

Young Lisa: One of my favorite things to eat in the summer is eggplant from the garden, sliced in 1/2" thick circles, dipped in water, then your italian seasoned Panko breadcrumbs, then fried in evoo just til tender. OMG... to die for!!! No sauce, no cheese... just the eggplant. Very satisfying summer meal. I too could be a summer vegetarian, but I do like that meat off the grill!!! lol

skbs: Our grocery stores here... Stop and Shop, will cook the lobsters for you! You can just take them home and eat!

toosie: Sorry you're feeling punky! Hope you get back up to snuff pdq!

SCG: I am a total fan of Stouffer's frozen mac and cheese... and you can nuke it... lol

Me roast is cooking real slow. I think I will make an executive decision and add some red potato halves about an hour before wife should be home. That should do it.

Aww, hope your spirits lift soon! I know the punk feeling, that is why I just had chips and cheese the other night!

I don't know what I am having yet, there is leftover roast or I was thinking some Hillshire Farms Beef Hot Links! They are yummy!

I came here for inspiration and that does it. I'd cheerfully use eggplants for target practice. But my better half is overly fond of eggplant parmesan so I think I'll make that tonight. Maybe a chicken breast will sneak into one corner of the pan. That'll be okay, no vegetarians here.
