I got to grow me some zipper creams....and a pig for the chops and cracklins...At least right now I got chops and lima beans on the agenda for tonight...If I be good may get some cornbread too.
This afternoon we are going to a "festival" at a little seaside community called Ocean Park. They hold an "Illumination Day" festival. It will start off with an out door band concert and strawberry festival...in the town center....and then in the evening after dark...the homes and public buildings will be lighted....with candles, luminaria, and electric lights.....and folks will walk in the neighborhoods.....sharing the beauty; and then will carry candles down to the beach and leave them there to illuminate the beach. This will be followed with an out door Bag Pipe and Drum concert back at the town center.
I am not quite sure how supper will fit in to these plans......but somehow I am sure we will find something to eat. I am thinking that before we go over.....around 4 pm....I will try my hand either at those Stromboli that we talked about last week or if those seem too daunting.....homemade pizza.
We had Spaghetti Puttanesca tonight. Simple, fast and tasty.
Earlier I tried out some white bean cakes, sort of like hamburgers but with cannellini beans instead of meat. They were real nice. Found the recipe in a library book I took out called "Lighten Up". The Puttanesca recipe was in there as well.

My son makes those bean cakes.....I thnk the last time he used black beans...but he has made them with the cannellini also.....(I thnk he mashes them and then seasons them and binds them with egg and panko crumb....shapes them into pretty hefty round cakes and fries......We love them!

Yeah, that sounds like them. Just like making hamburgers, but with beans. I'll try them with the panko crumbs next time. I have them in the freezer, but just didn't think to use them. I had a bum end of a stale loaf that I grated up instead.
My daughter's one foot into the whole vegetarian thing so I've been trying a lot of meatless dishes lately. The bean cakes were a big success. I don't mind not having meat for a few meals a week, or at least meals with minimal meat - sure saves on the grocery budget. And feels lighter. But I'm still a carnivore at heart
Hopefully pork chops and rice-a-roni with spinach and tomatoes on the side. That is my vote for what it is worth. It could get vetoed.
