I use a Shun Ken Onion chef's knife. It is very solid, with the grace of a asian chef's knife and the power of a german knife. It also has a sculpted handle that is very comfortable.

I've got Global, F. Dick (used by many prep cooks) & G. Sakai (Gerber Knive's Japan partner-distributor). I wanted to get one of those awesome Korin Damascus knives hand-forged by Japanese bladesmiths but there's no way I could justify the $500+ cost. My knife skills are amateur at best & I don't know how to sharpen those exquisite tools on a whetstone like you're supposed to.

I would LOVE to be able to afford a Global...but until I get a job it's my culinary issue Mercers for me. They aren't bad knives though. Although my chefs knife is starting to look more like my pairing knife from all the honing on my diamond steel lol.

You just need a good sharpener. A Spyderco Tri Edgemaker. I use it on all my knifes including pocket knives, self defense knives, hunting knives, kitchen knives, fillet knives...everything! You can shave with it after. Spyderco Triangle Sharpmaker (Set) My old Dexter knives are from the late 40's early 50's. They don't make them like that anymore. Cold Steel is always top quality stuff. I have never heard of the global knives but I went online and looked. They are just as expensive as the Henckles knives and they look like fine quality.

Global also have the MinoSharp Knife Sharpner. It makes it super easy...(for me!)

You know; a Dexter-Russell knife is a excellent choice.
It is a brand that is widely used in the fishing industry and the company also makes many different types that have a good feel.
