Eggplant does it for me...I made a portabello parmigiana and it was really good...DM me if interested in the recipe..

I voted for veal - yeah, I know, and with a heap of guilt too but I really like veal (saltimbocca's my favourite veal dish).

I've made Parmesan with turkey steaks too and that turned out good. Just pounded them down. Great on a crusty bun the next day.
