Balsamic vinegars are one of those items that you get what you pay for. The old aged ones are excellent the inexpensive ones are mediocre. Don't buy the ones available at Trader Joe's - even the premium one - they are crappy. I find the best ones are thick and syrupy.
Fig flavored balsamic is good, I tried it. Some of the other flavors I'm not so sure about.
The dark chocolate balsamic is terrific on fresh strawberries, it will be my new snack instead of plain strawberries.
I am glad to see some uses for it other than just salads, I am not crazy over it in salads, but can see where it could add a lot to things where you want a combination of sweet and tang.
I went to a cooking class that featured balsamic vinegar. It was amazing what all we ended up making with balsamic vinegar as a base. One of the most amazing things was a delicious ice cream topping!
