What is your favorite dish from Mexican cuisine, which transcends national borders and extends in some form up to Texas, New Mexico, and Arizona (and perhaps California and Colorado).
This is very difficult to pick 1...I just learned how to do fish tacos my way...battered deep-fried halibut, coleslaw, cheese, tomato, salsa or hot sauce, avocado..and add some black beans on the side...flippin simple and insane in my book....
Perhaps I should have chosen Huevos motuleños since I am very fond of the similar Huevos rancheros with eggs over easy and green chili. I agree with satx56 that enchiladas should be on the list. However, for the poll I chose Chile Relleno because it is very representative of the pepper based dishes I love from New Mexico
Carniatas when done well ( cooked for days until melt in the mouth) can be the best thing in the world but I do have a big weakness for Ceviche ( even better in Peru but I had some wonderful ones in Mexico too) and Venison with Mole sauce too which I had in the Highlands of Mexico. Delicious.

I voted for burritos...I love the ones they serve at Chipotle Mexican Grill...I get everything on them...rice, beans, veggies, chicken, salsa, corn relish, etc.
But, I've got to admit, Carnitas are wonderful too...I buy the Carnitas that they sell packaged at Costco...the meat is flavorful, and falls apart. I usually buy a package and divide it up into smaller packages to freeze, as it's just dh and I.
The very best Carnitas I've ever had in a restaurant are the ones they serve at Old Town Mexican Cafe in Old Town, San Diego!!! Their beans are to die for also!
Rellenos ! Made with the deep green peppers. Battered like tempura, not the omlette type coating. The white cheese, not the splappy yellow stuff inside. A tad of salsa, and sprinked or grated cheese on top. If they are swimming in sauce, the batter can get soggy. I like blue corn enchaladas, too, but they are hard to find. Viva La Veggie Mexican food.
