Depends....mostly grilled I would say, but there are certain things that are just good dishes that are fried - things that we very rarely eat but enjoy when we do (fried chicken, chicken fried steak, catfish, french fries etc). But for "everyday" type eating - grilled for sure....
Usually the fancier places will not smoke the fishes. Drive down the coast to a seafood place that has their own boat bring it in and you can find places that hang the fish in a smoker. I've had anything from smoked mullet and mackerel (kings/spanish) in Florida to smoked salmon out here in California. The way it comes out is awesome.
Smoked salmon [making me hungry] and fresh veggies steamed w/ a lil bit o lemon and/or lime and teeny bit of butter...
Grilled. For a lot of reasons, it's better for you.
We don't have a gas grill and buying charcoal to grill over is really expensive so we grill when we can but living in north central Montana sort of makes grilling a summer thing mostly. Then some say that eating the charred parts of grilled food may cause cancer.
We only fry in light olive oil rather than lard or Crisco and I think that isn't as bad. When my rich uncle gets out of the poor house maybe he will give us an indoor grill on a kitchen island counter with a powerful vent hood over it. Yea, dream on rickers !

Hope my food never gets cooked too much that it takes on a charred look. I won't eat it I don't like my food that cooked. I used to eat more rarer meats but switched to 'med-rare to medium'.
Frying in olive oil sounds good to me. I usually use that too. When it comes to what's used in the fry pan or kettle, we're at the mercy when we go out to eat at restaurants. I wish more 'regular' restaurants would offer grilled over fried. I said regular because someone told me that I can
go to a S. American restaurant and they offer 'grilled' calamari. That works if you live in a metropolis, like NYC, or downtown, Washington, DC., maybe even Atlanta, GA.
