What is your favorite type of cheese? Living in Wisconsin currently I have a wide variety of excellent local cheeses to choose from without exerting much effort.
this strictly depends on what I am going to use it for. I am not sure many can absolutely define what their favorite cheese is. I did say Swiss, but for salads, I like blue cheese, for melting it is probably American or Colby, with wine, as an appetizer we life a very strong cheese. I true cheese lover would have trouble picking out just one cheese.
I haven't smelled it/tried it since I was a kid, but I used to run to my bedroom when my family opened a pkg of Limburger- blech! Other than that, I love just about any other cheese.
I had sheep milk cheese for the first time yesterday. didn't like it. I don't like goat cheese either. Tastes like the goat.
I typically don't like gamey tasting stuff, like goat butter or goat milk. But cheese I can handle. Especially if it's sharp/aged/herbed. Try the sheep milk cheese in a parm type.

I do like Humboldt Fog and some Fetas, the latter with good olives.

Oh yeah! Roquefort and pears together is a great combination . Add good crusty bread and red wine and it's a Happy Meal
I had some really good sheep cheese once. It was at a farm open house event. Didn't expect to like it, but I did.
I have a tendency to use cheese strictly as a snack occasionally. Wisconsin has that effect.
For snacking, something with a kick like pepper jack or swiss. Cheese laced with buffalo sauce or chipotle is fun. I guess I'm kind of a lowbrow cheese guy.
