My wife has made Jello with canned cranberries and canned pineapple and walnuts for at least 15 years. The company enjoys Rasberry the most.

1 large pack of Rasberry Jello
1 can of whole cranberries
1 12-16oz can of crushed pineapples

Prepare the jello
Drain the can of crushed pineapple and add the pineapples
Add the whole can of cranberries
Toss in some broken walnuts and then put in frig to gell.

When set mix the Jello up with a large spoon

This recipe is exacly the same as the Quakers and Menonites in Lancaster PA use on their table and some also sell this by the pounds during Thanksgiving.

About pineapple:

When I was a kid we lived in Hawaii on Oahu. My Girl Scout troop visited the Dole pineapple factory in Honolulu. It was a neat place and the factory water tower was a huge pineapple.

Well, we spent several hours there back in the 50s and we got lots of freebies. Chunks of pineapple, sliced pineapple, pineapple cookies, pineapple juice, pineapple salad. As we left the factory we were all kind of weaving. As a result of this overdose of pineapple I have never been able to eat it since then.

I ate too much pineapple once and ended up with about a dozen canker sores all over the inside of my mouth. Yowch.

The jello came out perfectly! I made it again on Saturday for a little dinner party but used apricot jello instead of raspberry. I can't remember if I posted the recipe already, so here it is. The original included walnuts, which I don't like, so add them if you want.

1 can crushed pineapple in juice, undrained
1 can chunky whole cranberry sauce
1 large apple, chopped small
2 small packages raspberry jello

Drain pineapple, reserving juice. You will have about a cupful. Add enough water to make 2 1/2 cups. Pour into a small saucepan and heat to boiling. In a medium bowl, dissolve jello in hot liquid. Add fruit and mix well. Pour into a gelatin mold or 8" x 8" glass dish and refrigerate until set.

I made a mistake making gelatin the other day--does anyone know if this can be saved?...

I put it in the freezer to cool it quickly--and forgot it. It's now back in the refrigerator where it belongs, but is it ruined?

Put it back in the freezer, cut into squares, mix in some whipped cream or dreamwhip and you have "creamsicles" you can eat with a spoon

Most frozen desserts have some kind of gelatin in them, so I can't think of why it would be ruined.

I know some people hate jello, but we like it.
Your thread just reminded me of my favorite aunt who passed away 8 Novembers ago. She always put fruit cocktail in her jello and topped any she gave out with a dab of whip cream. Yummy!

Thanks for reminding me of a wonderful woman who is sorely missed. Hope your Thanksgiving jello was a hit.
