I make thin pancakes, almost like crepes, and I always use a non-stick frying pan (well, two at the same time to keep up with demand!).

My normal mix is two or three eggs per pint of milk, with just enough flour to get the batter to a heavy cream consistency.

Plus a pinch of salt, and I always add a little vegetable oil to the batter, which stops any sticking, plus a scant half teaspoon of butter in the VERY hot pan just before pouring in the batter.

I make whole grain pancakes every Sunday on cast iron griddles with a bit of olive oil. I love the way the cast iron distributes the heat for perfect pancakes every time.

We have three griddles of different sizes I use. Our kitchen cook top is natural gas and has 6 burners. I use one of the griddles that fits over two burners. I cook eggs on one end and pancakes on the other end. One of our griddles is large enough to use with a three burner camp stove, but it isn't used unless we have many guests at one time, it can also be used on the 6 burner kitchen cook top. When my wife makes pancakes she always uses a non-stick omlet pan because she is in a hurry and doesn't want to bother with a griddle.
