One of my favorites - a bit of "Spring Mix" lettuce (or you can use an arugula/spinach mix), with grape tomatoes, shaved parmesan, green onions, and balsalmic vinaigrette. Delish and fairly low in calories!
I usually start with spinach or romaine but my oh my there are so many things to add;
beets
bok choy (great for crispness)
left over veggies that have been cooked
canned or frozen corn or peas
cheese
pritzels
nuts
fruit
dressing made simple with just lemon and oil plus topped with blue cheese or Italian cheese
I could go on and on, there is no end to what can be added to the basic green salad.
