I've made it with a regular shoulder roast and with tenderloin when it's on sale. They're both delicious, but the loin even more so. It's a nice cut of meat, so some people would not crock it ... it's kind of like making fajitas out of filet mignon.
If you want to roast it, I can recommend a good, gingery teriyaki glaze.
Great idea , I will try it next time. Today I am going to make some foccacia dough and let it rest overnight. I plan to to make asparagus cheese puffs for tonight. Pizza here again! This time it's homemade.. red onions, chopped baby arugula, mixed bell pepper strips with fresh garlic and fresh mozzarella as topping, red sauce and extra virgin olive oil brushed on crust.
