So, Nomad, how were your new wraps???

I have no idea what's for dinner today. I took my mother to a new local restaurant last night. It was absolutely fantastic! Service was excellent, food was the best I have ever eaten (next to mom's of course).
We both had filet mignons, sweet potato fries, grilled mushrooms and grilled New Mexico green chiles, with a margarita to wash it down.

May just have to have a cold roast beef sandwich made from the leftover roast from Wednesday for dinner.

Pan-fried salmon fillets with a white-wine and lemon sauce with brown basmati rice. Baby spinach salad with a bit of light vinaigrette.

I have chicken tenders marinating for tonight. They're best grilled but weather and time do not permit tonight so I'll have to pan fry them or broil them.

I put them in a zip-lock with about 1/4 c. achiote sauce, 1/4 c. mustard, honey, the juice of half a lemon, and a little water. I chucked the lemon half in there too. Will serve with rice and salad.

Blizzard type weather all over the country we are having sleet mixed with snow. So chili sounds mighty good to me tonight.

Tonight will be a pork potato from our fav BBQ place. They take a HUGE potato (honestly these are the biggest potatoes I have ever seen - 8" long on average but sometimes bigger) - they bake it, split it open, add butter, cheese, sour cream and then layer chopped pork on top. They actually have to staple the to-go box to keep it closed. They send some white BBQ sauce on the side. It is SINFULY WONDERFUL!!!!!
