BBQ cities are generally known for their BBQ. I live in one.

From my travels:

San Francisco - sourdough breadbowls of clam chowder.
New Mexico - stuff with Hatch chilies.
Chicago (less travels, more just living there): deep dish pizza, Chicago-style dogs, Italian beef.
New Orleans: Cajun and Creole dishes, king cake, beignets
Cincinnati: cincinnati- style chili
Boston: Lobster rolls

St. Louis has its own sort of Italian food. But they are known for toasted ravioli.

StL also has great frozen custard and the best place to try it is Ted Drewes. But you can get good frozen custard at many places throughout the area. Get a concrete--they're the best!

Gooey Butter Cake originated at a bakery in St. Louis but honestly, I don't care for it. It is pretty well known as a specialty of the area though.

Not generally known is a salad you can get all over the area that I call St. Louis Salad. I like Pasta House's version very well. Here is a recipe:

I don't know why, but this salad is addictive.

Not sure who gets credit for fried cheese curds (Minnesota? Wisconsin?), but talk about a heavenly food experience!

Off the top of my head here's a quick list:
NYC: Pizza
Chicago: Deep Dish and dipped sandwiches
Miami: Cuban
Seattle: any seafood, likely sushi
parts of NJ: Indian
Carolinas: BBQ
Texas: BBQ
Maine: Lobster
