I mean, it is okay but it gets so much hype for being some amazing dish that is worth a lot of effort to make correctly, including some expensive ingredients and even specialty cooking vessels. We recently took a train down to Valencia (the supposed birthplace of paella) and after sampling various versions right at the source I'm still pretty "meh" on the dish.
Wagyu. It does have a great flavor and tenderness, and is better than grocery store beef, but I don't see it being hugely better than prime beef. Its biggest pro seems to be it's now easier to find than prime, so I still buy it a couple times a year for special occasions.
I've never had paella but would love to try it at least once. There are a couple of things I wonder if they have been so overhyped to be a letdown are Kobe beef and Franklin barbecue. Would love to try both just to see, but they sure are hyped like the greatest thing ever on the various food programs and Youtubers.

When I first started hearing about avocado toast I looked it up. OK, avocado on toast, with whatever else you want to put on it. Isn't that an open-faced avocado sandwich? I love a toasted avocado sandwich, but I still do not get the hype over avocado toast.
Sushi--never had it/never will, so not sure if there's anything there to get worked up over.
I started seeing feta cheese in more salads and I don't get the huge appeal. I like cheese but not crazy about that one.
I remember when Greek yogurt became a thing--I do not like yogurt at all and people would say "try GREEK yogurt!" yeah, it's still yogurt.
Never had paella and I know I'll never make it.
Sometimes I use the term "deconstructed" if I'm having a sandwich that falls apart.
I feel that way about chicken wings. I know people love them, but I don't get it. To me, it never seems like there's enough food on a wing to justify the hype. I would eat a drumstick or a thigh cooked the same way any day.
