hmm, I've had breaded zucchini. Not sure if it was fried.
You mean sweet potatoes served like regular French fries?
Just asked the wife...we baked the sweet potatoes cut like fries. But, I've had them at restaurants and like them. Bet cauliflower would be good too! I like fries and fried okra as well.
Pan fry okra, potatoes sometimes, yellow squash (haven't done that in a while). I deep fry sweet potato chips a few times each fall. They are so good! I did do a lot of stir fry with mixed vegetables for a while but sort of burned out on it. Also did tempura vegetables at one time, but that's been at least 15 years+. The majority of vegetables I cook are either on top of the stove or in the oven.
Here's how I do the sweet potato chips. (They are not like sweet potato french fries). I got this recipe or idea from a former coworker. Peel the sweet potatoes and slice them very thin. After you have peeled the potato just slice -- the shapes will almost be round. Use a very sharp knife and cut the slices as thin as possible. Deep fry in hot fat. Most of the slices should puff somewhat if you have sliced them thin enough. Sprinkle with confectioner's sugar and serve immediately. These do not hold at all! I always have the rest of the meal ready, the oil hot and then cook them at the last minutes but they are so - o - o good.
Lacey, I had the pan fried brussel sprouts at a holiday dinner a few years ago. They had bacon and something else (onions maybe?) and were very good.
Yum to all the above. Plus - fried spinach pakora (Indian) and corn fritters. Mmm mmm good.
