I have an eye of round roast. What do you think about this?:
Slice the roast into 1" thick "steaks", pound it to 1/4" thick.
Drop it into a ziplok bag with flour, salt, lots of black pepper.
Lightly fry / saute' until golden brown.

make a cream gravy and some smashed patatos and you have chicken fried steak...

and a very good one. might "marinate" for a while in buttermilk and let the acids in the milk break down some of the fibers a bit. the buttermilk will blend well with the flour and spices.
