I second the Pico Pica recommendation. I always have no less than 10 bottles of the hot variety on hand.

You'll be extremely lucky to find it West of the Rockies, though. Amazon or Mexgrocer.com are two sources.

Pico Pica is my favorite bottled chili sauce of all time. It is so different from the vingar based everything else. This is a more Northern Mexico Country hot sauce. It used to be different when I was a kid before being bought out by Juanita foods in the late 70's. It is still my go to sauce for EVERYTHING. I have been using quite a bit of Sriracha sauce since the late 90's. Picked up the taste when taco trucks began stocking it. Kind of a Thai-Mex flavor. YUM!

Cauterize and let the healing start. I've seen toddler in old Mexico walking around eating jalapenos like candy. Wish I had got my system activated that soon. One more week to wait and then it's authentic Mexican day out for me and the wife. The nice place with go to is quite formal and the plates are the size of turkey platters. I'm asking questions and going for a variety of things that sound good.

Menudo (beef tripe stew)

Barbacoa tacos ( beef cheek meat)

Caldo (either beef or chicken) vegetable soup

Tripas ( deep fried intestines)
