Who eats vegetable hearts? I love them, raw, dipped in salt. Cabbage, Cauliflower, Celery, Lettuce. When I buy Broccoli, I cut the stems off and peel them and eat them before I even put the groceries away. One of the most anticipated days of summer was the day my mom would bring in the first Kohlrabi from the garden, and we'd peel it and eat it.
i love veggie hearts, but i guess i take them for granted because even growing up, they have just always been mixed in with the rest--not eaten any special or different way from the rest of the veggie
well you can either buy them in a jar---and the best/italian variety are submerged in oil. the most commonly found ones though are submerged in vinagar.
if you eat an actual artichoke:
the best way to prepare in to boil them until tender, then dip each leaf into a marinade of oil, lemon, parsley and salt. eat ONLY the tender section at the bottom of the leaf but biting and pulling away from the teeth.
once you get down to the heart, you take off all the "hair" and eat the heart--it is SO good!!!!
