VIVE Auguste Escoffier- the Father of modern French cuisine. To me French cuisine takes me to the country sides of France. Fresh food and wine with all the French provencal herbs. The first foodie nation was France.

First, I think "yum," then I think a perfect roast chicken (seasoned with Herbs Provencal) accompanied by wonderful seasonal vegetables and served with a nice red wine...followed by something delightful with fresh raspberries...but maybe I'm just partial to these foods...?
When I think French food in general, I'm thinking Herbs de Provence, Truffles, Brie & Baguette
When I think of specific dishes that I love, it's probably Foie Gras, Roast Chicken w/ Herbs, Croque Moniseur, Chocolate Souffle and Pears Poached in Red Wine.
When I think of French food, I think of creamy soups made with exotic vegetables that took all day to prepare, (leeks or parsnips, shallots) crusty french bread, maybe a steak or lamb chop marinated in herbs and nicely broiled. I definitely think of frites, those crispy shoestring french fries. And I always remember French onion soup with bread and cheese on top; and of course, the desserts so decadent, they make my toes curl.
I think of superb sauces that turn everyday plain food into an experience. The kind of sauces where they start out with a cow and a few days later they get a cupful of essence of beef, or the things they do with wine and butter. Ooh la la.
