As I travel around America I notice that many of the independent restaurants have closed and have been replaced by chains. The number of chain restaurants is incredible. I am impressed with many of them and disappointed by many of the independents who seem to have so much promise.
If you were to open a restaurant yourself, what would it be; a chain or an independent?
The advantage of a chain is alot of the specifics (menu, prices, layout, marketing, etc) is already figured out.
I would go with independent - in Southern California, the independents are far better than the chains. I would not open a Mexican, Chinese, or Italian restaurant, as there is an oversaturation in my area of these and I would prefer to do something unique but not off-the-wall, like Cuban or Peruvian.
I cook very well, and I would love the opportunity to open up a restaurant. Since I would probably want to share it, there would be more than one location. But only in New York, Chicago, and Houston.
Independent, without a doubt. It amazes me that people will line up and wait for a table at Olive Garden. Have these people never had a decent meal to compare it to?

Just because one thing is better, it doesn't mean that the other isn't still good.
If I were going to open one then definitely Independent. Eating wise? I have no qualms about either. Yes some restaurants are better than others, but I have ate at very few places where I didn't like the food.

Having been subjected to the Olive Garden mnay times for business purposes, I can honestly say it isn't good. I couldn't even call it mediocre, it would be too kind.
