At some point this weekend, we'll make blackened fish, probably Barramundi. No doubt I'll be pressured into making some jambalaya as well. The things we do, huh?
Barbequed swordfish steaks marinated in: dijon mustard, lemon juice, garlic, white wine, fresh parsley, s&p. Served on a bed of baby spinach leaves. Side of roasted potatoes.

I'm thinkin' pulled pork burritos with all the extra goodies inside it, refried beans and spanish rice for dinner tonight. This can always change because it's still early but for now it sounds good to me! Have a great week-end everyone.
Decided to eat regular this weekend, instead of diet. We are busy discovering new places around our new home and stumbled upon a fish market which had lots of fresh local fish. Last night we got some shrimp and some fresh swordfish that was fantastic. Tonight, we might go back to get their crab cakes.
They also serve prepared dinners to go, so we'll be regulars for sure.
My new cute Tuscan kitchen is not really a cook's kitchen, so I'm having a hard adjustment..no pantry, not enough storage or counter space. I hear that a lot of folks don't really cook at all, but still manage to survive.....maybe I'll try that.
Never heard of a corned beef hash taco, but I must say - I am diggin it! Whoo Hoo!
Love me some corned beef hash - in any form!
They are quick and damn good eatin. Just make corned beef hash like usual with potatos and onions. Then stuff them into king size corn tortillas and fry like other tacos. Cheap and delicious. Oh I mix a packet of Lawreys taco seasoning into the hash before making the tacos. YUM.
You could also roll the tortillas with the mixture and make taquitos.
