OK, no one has mentioned Kaluz yet. If you are staying in Lauderdale-by-the-Sea, you *have* to go across the bridge to Kaluz (you can also check out Blue Moon on the way, it used to be my favorite for many years, but now Kaluz is my favorite). I am not a vegetarian, but they have the best veggie burger ever!
Kaluz - New American Restaurant

Also while in Lauderdale-by-the-Sea, check out LaSpada Subs (best subs in South Florida) and Aruba Beach Cafe - good food with awesome ocean views)

If you go just a little north from Lauderdale by the Sea on A1A, there is Seawatch - another very good restaurant.

Outside of Las Olas/A1A Beach, there isn't anything. The Hard Rock hotel was pretty ghetto and even the locals would avoid it especially for night life. The only time I ever heard anyone going to the Hard Rock was for a concert or performance. Outside of that, people avoided that place like the plague. Go to Miami, there is a lot more to do there and consider taking a trip to the Keys

BTW, I think summer is a terrible time to visit South Florida. It is too humid and rains continuously. I recommend going in the early Fall and late Spring.
