If I give my two weeks notice the week before my anniversary date do they have to pay me my two weeks earned vacation? My notice would be like monday then anniversary date would be the week after on wed.?

I think it depends on your company policy? not all will pay earned vacation in full. Last time I switched jobs (a year ago) my company retroactively calculated my earned days and then rounded-down the number to give me a payout.

It depends on how your company handles vacation days.
For some companies it is on a contingency of some kind, therefore, when you give notice they can decline to pay you for vacation, period.
For some others you have to actually schedule the vacation, then give notice when you return.
Then for others, they will include vacation pay in your last paycheck without you actually using it.
You'd need to check with your specific company for their own policy.

Texas law is silent on payout of accrued vacation at termination of employment. Your employer's policy will determine whether you get the days or not.
