I had a couple of mature trees and I guess it caused hundreds of seedlings in the mulch surface popping up. These little redbud seedlings are now about a foot high and they have very deep roots, and they are very hard to pull out by hand.

Is there any off the shelf product I can use to get rid of them? The trees will be cut down too.

Just cut them down to the ground by any means you have. Or you can buy one of these to help you along.

Oh no. You are cutting down Redbud trees??? Why? Are they diseased or what?
I just planted a Redbud and am babying it like crazy. I would love to have 2 or 3 more of them, because they are so pretty in spring. Can you mail me your Redbuds??? LOL LOL

Agree, very pretty in spring, my neighbor has two and I'm thinking of getting one.

I think I have about 100 or more sprouting up like crazy all over my backyard where ever I have mulch, and also in the front yard where I have lava rock in the flower bed.

Soon as they get about 6 inches tall, they are very, very hard to pull out.

Is this what we are talking about?

I already tried that .. you wait a week or two and they start growing up on you. I sprayed some sort of a very tough (supposedly) vegetation killer made by Bayer a couple of days ago. Lets see if it does the trick?
