How does one protect a green house against hail? (leaves, plants, greenhouse)

How about a car port?
You can use it in the summer, you won't want anything in greenhouse in summer anyway.
Then in winter, if you have less of a chance of a hail storm, put plants in the greenhouse and
take the roof off the car port, or move it so the greenhouse will get some sun.
They aren't cheap, but it will protect it.
You can cover the outside of it with greenhouse bubble wrap, the large heavy duty stuff with the bigger bubbles. Only install it on the exterior of the greenhouse, not in the interior as usual, and for your purpose it MUST be applied with the bubble side facing inwards and the flat side facing outwards. You can apply 2 layers if you think it's necessary.

If I were seriously concerned I'd either use corrugated fiberglass roof panels, or build removable frames with a "screen" of heavy gauge expanded metal. Removable, so you can lift them up and clean under them - leaves, pine needles, etc.

I would suggest corrugated plastic sheet. It’s very lightweight for easy and quick install and remove. The hail will bounce off of it. White is cheapest. Big box stores are a bit over $20 for a 4’x8’ sheet but if you can find a local plastic supply that sells retail it can be as little as $10.
A few brands are Coroplast, Cortez, Polyflute, Proplex.
