Clematis, but get one of the evergreen varieties that keeps leaves, the other kind die back and come up from the ground every year. I have a white one with 6" flowers.
Sweet Autumn Clematis is lovely on a fence and has tiny pretty flowers. Confederate Jasmine will work, Lady Banksia Rose, Amethyst Falls Hydrangea -NOT the common hydrangea which takes over the world.. Lots of wonderful plants for growing on a fence or trellis. It all depends on your zone and your sun exposure.
I enjoy mixing lots of different vines for more prolonged color throughout the year.
The vine you select depends on where you are located as well as your soil, amount of sun and moisture etc...but if you are in the proper location, I can now recommend native honeysuckle (lonicera sempervivens) for the eastern us. I'm in zone 7.
I bought one last year at a native plant sale. Either last year or the year before, I forget. It was in a small pot, and is now 20 feet tall and blooming with red, tubular flowers. I forget which cultivar I got. It got pretty big pretty fast, but apparently is not invasive, and can be trimmed.

We had Autumn Clematis for a few years but had to get rid of it. The bees loved it and freaked out Mrs. Tek. If you're going to use it consider keeping it a distance from where you spend time. Absolutely beautiful plant.
If it can grow in your zone Bouganvilia is real nice.
