Your mother and her half brother share a parent. That makes them 1/2 siblings.

You and his kids share a grand parent set, making you 1/2 first cousins. When those 1/2 first cousins have kids you will be those kids' children's half 1st cousin, once removed. And vice versa for your kids. The kids between the two sets involved to each other will be half 2nd cousins they will share a set of great grandparents.

A great cheat sheet that I have is this:

1st Cousins share grandparents
2nd Cousins share great grandparents
3rd Cousins share great, great grandparents

They would be your first cousin once-removed. Their grandparents would be your great-grandparents,.

Correct. If your grandfather is the person's uncle, that person is the first cousin of your parent. Your parent's first cousin is your first cousin, once removed.

I have a first cousin, once removed, who had a baby. I know the baby is my first cousin, twice removed.

My son is having a baby in January. What is his baby and my cousin's baby to each other.

Is there any distinction for double cousins or where family married back into themselves? We have one line where two brothers married two sisters. There are other lines such as where first cousins once removed married. Genetically, they they show up closer than regular cousins.

No, apart from double cousins, there's no real distinction for people who relate in more than one way - they simply have more than one relationship.
