Find a place with a kitchenette so you can save money on going out to eat. I'm not sure if that's what an extended stay means as I've never stayed in one.

Basically like a hotel suite with a kitchen & they provide cooking utensils so you can save some money by cooking vs eating out 3 times a day.

What I used to like but don’t hear much about anymore were the “Corporate” apartments. They were available by the week or month to month & located in an apartment complex vs a hotel/motel.

Fully furnished with phone & utilities included (all-inclusive), equipped kitchen & access to amenities such as pool or gyms.

Craigslist is also an option.
This was offered to me when I came back for a second stay in an area I really enjoyed. They had me locked in at $25 / night until I found my own place. I was treated really good and still recommend that motel to people going to that area.
