I'm planning to sell my house and move in with the in laws until we actually move out of state. What's the best way to get your mail? Can I have them hold it at the post office until I complete my move to the new state?

I have always gotten P.O. boxes to handle my mail during moves. Keep them only as long as you need them.

I believe you can only have mail held at Post Office for 30 days.

If it will be longer than that, get a paid mail service like ups mailboxes to have US Mail first class forwarded to. USPS will forward for 1 year.

I've known world travelers who used earth mail, which is a service that scans & emails all your mail to you. Here's an ad comparing two online services.https://www.postscanmail.com/competi...lass-mail.html

What about the option of forwarding my mail to the in laws for a few months then do a change of address when I land in the new state?

You don't mention the length of your stay. If it's a matter of at least several weeks, just have it forwarded there. In fact, that would probably be useful because they could hold anything that arrives afterward during the move.

Until I land a new job. So it may be a few months.

The most logical thing is to have your mail forwarded to the in-laws since that is where you will be living. Once the next move is completed, do the forwarding thing again.

That’s what I did. But keep an eye out for bills etc. Some mail gets held up by the buyer of your house not quickly forwarding. Then some will stall at the inlaws. So either call billing companies to find out what you owe or at least have a check list to make sure you don’t miss stuff. After a couple months at the final address it should be ok except you will be getting that seller’s mail occasionally for a while.

rrah's option seems to be the most practical.

Another potential option is to get a private PO Box and request that they periodically mail you your mail to your requested location, but this will of course cost more. A weird quirk with private PO Boxes is that USPS will not forward mail from a private PO Box.
