theres lots of variations...queso fresco is crumbly cheese that goes over beans n enchiladas n stuff chihuahua cheese is the stuff u melt and use for queso fundido or queso con chorizo and inside quesedillas there is enchilada cheese thats a little different than chihuahua cheese also for melting. panela comes in a brick u melt it inside stuff like chiles rellenos. there are a few more :P
Wow, sorry you havent found anything yet in STL for good mexican, etc....
I am a self-confessing foodie, and always look forward to going home to STL for good food.
Dont have time at the moment to share the restaurants that I have found to be amazing, but will be back in a bit to start listing them....I have some friends at Feast magazine, and at Sauce, they always take me to what they consider the best places while I'm home.

You mean Kraft and Sargento Mexican isn't authentic?
You could always come up to Minnesota for some Mexican hotdish and lefse quesedillas -- with lots of yellow cheese! Ya, you betcha. Man, now I'm getting hungry.
Good mexican food is lacking here in Michigan, a good restauraunt is hard to find. I dont see why any other midwestern state would be much different. No area of the country has the mexican food that the southwest has. I think the reason for that is obvious.
