Actually you can take hispanic out and replace it with Mexican as they are probably 99+% of the hispanics in the town. Look for any small town with a meat processing plant and chances are you'll see the same thing.

Just off the top of my head, I think the northwest Arkansas chicken-farming area has many Hispanics.

I don't think Mankato is, but Worthington or Willmar (or both) are very hispanic....maybe close to 40%. My cousin lived there briefly and she said it's "all Mexicans there" (she's a Chicagoan). Mankato being that Hispanic would be news to me!
