New Orleans fits everything, nearest beach is Gulfport/Biloxi, Gulf Shores, AL isn't a far drive. Many lofts and great neighborhoods. Downtown is very active as well as other neighborhoods. Post Katrina NO is seeing more investment than ever.

Houston has many many lofts but many aren't in active neighborhoods, downtown is pretty dead for a city it's size. Seems like you would enjoy New Orleans more than Houston.

Miami.

Houston's downtown is relatively dead and the beaches nearby leave a lot to be desired. However, if having a vibrant downtown core and great beaches isn't a must for you; I'd recommend it.
