Neither of these places would satisfy your interests in liberalism and vegetarianism. They are in the Kingdom of the Religious Right - that's why I don't live there anymore.
That being said, I liked Tulsa as a physical place - it's a pretty city, and cost of living is low, and it is near the woods of eastern Oklahoma, which are beautiful.
OKC is physically really ugly. I lived in Norman, which is about as liberal as you're going to get in OK. It was an alright place, but not a place I can really recommend.

As for being left of center politically...I don't know why I mentioned it, politics is not very important to me and I am used to being surrounded by religious conservatives since I was born and raised in Texas. ;-)
I'm female, 36, left of center politically but also pro-gun and anti-illegal immigration. I work in I.T. and am a vegetarian. I want to live somewhere with a good job market and decent cost of living.
I'm open to any and all suggestions except the West Coast, Alaska, and Hawaii. Fire away!
I think Minneapolis might be too much; I'd need to be able to travel easily back to DFW in case I had to deal with sick parents. Both of mine are getting on in years and I don't fly well. I'd like to stay within a day's drive of DFW, ideally.
Places like Oklahoma City, Tulsa, Madison (Wisconsin), Valparaiso (Indiana), Omaha, and Kansas City MO have come highly recommended too. Anybody have any thoughts on those?
I think Valparaiso could be a good fit for you. It's a beautiful area with lots of farmland around it, it's very safe and about an hour and fifteen minutes into Chicago. The only downside is it's 16 hours to Dallas driving.
Have you considered Wichita? It's close to Dallas (6 hours) and is a thriving, surprisingly beautiful city with quite a bit going on.

Just throwing this out there, but Ithaca NY fits pretty much everything, but the gun laws in NY are known or are viewed as restrictive. With that said, you can find gun and rod clubs in the towns just outside of Ithaca.
Dryden, Lansing, Groton, Trumansburg and Newfield are all towns in Tompkins County just outside of Ithaca that have such clubs.
