A couple of major differences. In the US South, friendliness and hospitality are rather superficial, and not heartfelt, merely expressed because that is the expectation of the culture. Outsiders are viewed with suspicion, even with a guarded display of yall-come-back. In Mexico, any expression of friendship or hospitality represents a genuine desire to have a close and amicable relationship.
In Mexico, a stranger can wander around pretty freely in the countryside, without being seen as a trespasser, even on private property. But in the US South, a stranger on private property or even on a public road where pedestrians are uncommon, will always be challenged sternly and re required to account for himself, if not shot at.

Wow, I also live in the South. I had no ideal the American South was more dangerous than Mexico. Who knew?

Yeh, we really like to "ham it up" in Oklahoma too!
Next time I'm holding the door for a lady I'll be honest with myself and remember that I really don't want to open it for for her, feigning a smile all the while.

I'm going to go ahead and venture to say that you're a northerner or west coaster that has never been to The South or Mexico.
Basically, the criteria mentioned are at once vague and universal. Honor killings, Hospitality, Religiosity... All cultures share those values to one degree or another.
