I think I heard that the St. Paul sandwich came from a river boat, or perhaps some sort of mistake from an area in old STL area called Hoppy's Alley (china town).

Scrapple is similar to goetta, except that it uses cornmeal and/or flour along with the pork leftovers and seasonings.

How about chitlins (chitterlings)??? I'd eat tripe soup before chitlins.
I ate some sort of liver hash w/ eggs in Appalachia I thought was good.

The real specialty in Dallas is the corny dog. It got its start here. You can get them anywhere, but the place you'll want to get one is at the State Fair of Texas. (BLOGGER'S NOTE: I may not eat wieners, but I know a good thing when I suggest it. )

And in Houston, their big thing is seafood, and there are lots of seafood places, including some strong regional chains with local ties. As for what was invented here, I'll have to do some research and get back to you.

And, finally, 70 miles east of Dallas, the small town of Athens has their specialty. It's the place where the first black-eyed pea was grown and also the place where the hamburger got its start. (BLOGGER'S SECOND NOTE: Okay, okay, so Athens isn't a city, but I can credit Dallas, can't I? )
