Some of the choices given were good but not racially diverse (Asheville for example). The OP might check out Chapel Hill, Carrboro or Durham, NC. They adjoin one another and offer all of the criteria mentioned including racial diversity. Of the three I think Carrboro would be the best fit as it's the most liberal town in NC and surrounded by two of the most liberal cities in the state (on par with Asheville). While small(population 20,000) Carrboro feels much larger given it's twin city status with Chapel Hill (population 57,000 plus around 25,000 UNC students). Durham (a few miles to the north) has a population of 230,000.
Diversity doesn't apply to just having a Black population. Typically it involves decent numbers of Asians, Hispanics and other nationalities (Indian, Pakistani, Middle Eastern for instance) as well. With a population of 230,000, numbers from 2%-8% are fairly significant.
Durham, NC:
45.50% White,
43.81% Black or African American,
3.64% Asian American
0.31% Native American
0.04% Native Hawaiian or Other Pacific Islander
4.75% some other race
1.94% two or more races.
8.56% were Hispanic or Latino of any race.
Durham has more than 100,000, unless the OP is going to hang out there all of the time and finds it "cool" enough.
Asheville has other groups and a satellite UNC campus. Here are demographics for Chapel Hill and Carrboro and they aren't that much different from Asheville: US2010
In NY, places like New Paltz, Saugerties, Rhinebeck, Trumansburg, Hamilton and perhaps Oneonta and Clinton. Some are under and over the range in population, but not too far either way.

In Michigan I'd suggest Ann Arbor (which is a bit over 100k) and Kalamazoo ( college town atmosphere, some small museums, parks, AA, Asian and Middle Eastern populations, lots of ethnic restaurants such as Shawarma, Thai, Indian and such.)
