Off the top of my head for Austin -

*Mexican (mostly known for Tex-Mex though)
*Japanese (due to the widespread acclaim of Uchi/Uchiko- most recently: #10 Uchi + Uchiko, Austin : The 20 Most Important Restaurants in America: In the Magazine: bonappetit.com)
*Czech (kolaches!!!!)

In New England? It depends on the dish. It's mostly American, fusing together English, Breton, and Native American traditions.

In NYC:

1. Chinese
2. Italian
3. Everything else

You find the first two in whatever neighborhood you go to. Chinese take-out and pizza places are in every neighborhood After that the neighborhood's ethnicity determines what's popular much more, and that could be Jamiaican, Mexican,Dominican,Haitian, Korean, Russian, Kosher, Southern, Puerto Rican, or whatever the neighborhood is.

It's true that there are a lot of Chinese restaurants around Portland, but unless you're out by 82nd or at a few spots elsewhere, much of what's available is mediocre Chinese-American places--or sometimes just sort of sleazy lounges with video poker machines that happen to sell Chinese food.

I'd actually say that Thai food is much more popular these days--there's Thai restaurants practically everywhere these days. Vietnamese food has really exploded in popularity as well. There's pho places even in some of the outer suburbs these days...
