Obviously they're in the Northeast and Great Lakes region. Definitions of so-called "white ethnics" varies. It almost certainly always includes Catholics of southern and eastern European origins. Usually includes Jews as well - as they are integrated and accepted as "white" - though they have a different social profile from the white Catholic groups. Usually includes Irish Catholics as well, but they've been around longer and are generally more assimilated and since religion isn't counted in the census, it can be a bit tricky to separate out the so-called Scots-Irish Protestants from Irish Catholics, particularly in the South and West.
The 4 largest white ethnic groups are Irish, Italians, Jews and Poles. Smaller groups could include Greeks, Portuguese, Hungarians and other Slavic groups.
I have Catholic, 100% Polish-descended relatives in the Midwest in suburbs of Milwaukee and Detroit and they're basically rednecks at this point. They go hunting, listen to country music, drive big pickups... There's not much that makes them special at this point from their English, Irish, and German descended white neighbors.
I unfortunately watched both of these crappy fights. What was notable was not the technique of either fighter (Mollo has no head movement, which he would have learned under the worst Philly trainer), but instead the remarkable display of Polish pride from the crowd (fight was in Chicago). Mike Mollo is an Italian-American from the South Side of Chicago, the fight took place on the South Side of Chicago, yet the crowd was still overwhelmingly in favor of Szpilka. Mollo was actually booed during his intro for the first fight.

I thought those were common rural tastes, not suburban tastes except maybe in the south.
Since there's going to be some double-counting, it's difficult to tally them up, but we get a size of the "ethnic" population. All groups are at least 0.5% of the population.
It is so weird that the OP considers some whites ethnic and others aren't. Isn't everyone ethnic?
No. For historical and immigration reasons. You hear of Italian-American, Irish-American identities much more than German-American, English-American groups. Though it's declined in the last few decades.
