Can't speak for Bellevue but here are some alternatives to Irvine (with similar socioeconomic levels and population densities):

Fremont, CA

Pleasanton, CA

Sunnyvale, CA

Davis, CA

If you dont't mind snow:

Troy, MI

Sterling Heights, MI

Rochester Hills, MI

Some of these places are very, very suburban. Downtown Bellevue is a highrise district with the parking mostly underground, and no setbacks between sidewalk and building in the typical new building in the past 30 years.

Bellevue is sububan as well, with single family homes within a few blocks of these highrises. It also started growing due to a major mall being located there, just like most of the other successful Edge Cities.

Bellevue is the most urban Edge City at this point, mainly due to geographical constraints and the forward thinking City of Bellevue's progressive zoning and planning policies.

It's pretty late to the party with a rail connection however, but I realize that's coming eventually.

I'd say Jersey City, NJ without a doubt is an edge city.
