Another poster on the 'highways and expressways that just miss state lines' wished such a thread had been created already, so I'm going to bite the bullet and create that thread myself. For this thread, I ONLY want to talk about roads/highways and expressways that start in one state, do a curve that briefly takes it into another state, and then back into that same state.
Anyway an example I remember well from my past road trips, is that I-24 dips south from Tennessee into Georgia for 4 miles west of Chattanooga, then reenters Tennessee for good. During that brief 4 mile segment into Georgia, I-24 does have a junction with the northeast terminus of I-59.
How about other such examples, you guys remember that exist?
Interstate 86 is mostly in New York State, but a little over a mile dips into Pennsylvania near Waverly, NY, and the last five miles or so are in Erie County, PA until 86 interchanges with I-90 east of Erie.
About 1.4 miles of I-684 clips part of Connecticut. The rest is in NYS.
I remember a short portion of I-275 (beltway around Cincinnati) dips over into Indiana (maybe a couple of miles).
Interstate 684 is mostly in New York (Westchester County) but does cross the corner of Connecticut at Greenwich (Fairfield County) for a mile or two.
New Jersey 440 connects Interstate 95/Interstate 287 with Jersey City but in a very roundabout way. It starts in I believe in Middlessex county and crosses over the Outerbridge Crossing into Staten Island as New York 440. It then crosses the Bayonne bridge to Hudson County, becomes New Jersey 440 again and reaches Jersey City.
The only one I could find in the west is I-82 from Ellensburg WA to a junction near Hermiston, OR. About just 10 miles into Oregon.
These are less common in the west for obvious reasons. But a bit off topic, there are a few short interstates. In Idaho I-86 runs for just 58 miles from the junction of I-84 to Pocatello. Interestingly I-86 is not seen again until just east of Erie, Pennsylvania. Also of some note I-84 is south of I-82 in eastern Oregon going against the usual numbering system. I figured out that is likely because when I-82 was being built I-84 was still called I-80 North. So they actually signed it correctly at the time.
One of the shortest interstates in the west may be I-705 in Tacoma, Washington running for less than 2 miles. The topography and generally wide open spaces in the west don’t allow for what the op is asking.
Here is another one that I just thought of. The Garden State Parkway.
The Garden State Parkway of course is famous as a road in New Jersey - the Garden State. But there is a 2 mile or so section that goes into New York State that connects the GSP with the New York State Thruway.
Officially the 2 mile section is part of the New York State Thruway as the "Garden State Parkway Connector".
In Missouri, I-72 runs west from Illinois just over 2 miles into Hannibal.
Also in Missouri, I-57 runs west from Illinois, probably about 20 miles to Sikeston.
I-24 and I-86 are absolutely the poster children for what the OP is describing. Not entirely the same thing, but I-95 just barely clips the corner of Washington, DC on its way from Virginia to Maryland.
Do non-expressways count? U.S. 340 goes from Maryland into Virginia for maybe two miles, then crosses into West Virginia. Some number of miles later, it re-enters Virginia.

Might be a bit of a stretch but: traveling northeast from Vegas, I-15 passes through Arizona for only 31 miles before hitting Utah.
I'm surprised you mentioned I-705 in Tacoma and not I-182 in the Tri-Cities, lol! I know a few other tiny western interstates are I-405 into downtown Portland, I-115 into Butte MT, and I-184 into downtown Boise.
This section of I-86 between Elmira and Binghamton, NY that dips into PA for a mile.
