Is there anywhere east of the Rocky Mountains where summer nights are cool and crisp (Mid-50s or less)? I would think it would be somewhere in the western Great Plains, the Great Lakes, or the Atlantic coast.

Upstate New York summer night temperatures typically fall in the mid 50s to low 60s. Once you get into the 2nd half of August you’ll also have no shortage of 40° F nights.
Northern Appalachia, New England and the Upper Midwest would have similar temperature patterns. I’d look anywhere with a combination of reasonably high latitude and high altitude.

It actually did this the past few nights(and even during one day). Some times you can get those nights in the 70's or even 80's so, but nights in the 60's are just right.

Custer or Hot Springs, SD. Plenty cool at night - even in the summer. Slightly more humid than most locations in the Intermountain West, but it doesn't rise to swamp ass levels like it does east of the Mississippi.

I like it, like it a lot, one of the reasons I'm happy to live here in the Appalachian foothills of TN.
Low temps were in the 50s across much of the East the last couple of mornings. Even here in the D.C. area temps in the 50s were fairly widespread in the outer suburbs. But a lot of the East had lows over 10 degrees below average Sunday/Monday, so that's not indicative of typical summer conditions.
Anywhere above about a 4,000ft elevation. When I visited Clingmans Dome on a summer afternoon it was only about 55f.
