In St. Louis, there seems to be an endless number of nail salons, car washes, QT’s, used car lots, corner bars, pizza joints, and urgent health care centers. Also, I know of one intersection where there are pharmacies located on three of the four corners.
To me any business that is able to make profit isn't over saturated since supply is meeting demand. Symptoms of over saturation would include businesses closing or a bunch opening and some will close later. In my area coffee shops were over saturated with a Starbucks literally every other block and other coffee shops in between and across the street. Recent closings have dialed that back to a more sustainable level.
I concur with the post above and think that boba tea may also be over saturated in LA. Lots recently opened and they can't all be busy. Similarly we've had a wave of Nashville hot chicken places open. How long will that fad last?

Two other examples of food crazes that have already busted are poke bowls and cupcakes. There used to be so many shops selling both of these near us, and most have closed.

I have not seen any of the stores I mention with lines going out door, and NYC rent is super high. I have a hard time fathoming how any of them are making profits high enough to justify even being here.
Sure, there is lots of people in NYC, but you can only charge so much for a crappy deli sandwich or potato chips, or slice of pizza before your customers decide be better to spend that money at a French place or Steakhouse.
