Aussie wanting to move to the US, where should I move to?

Austin seems like a good choice for you. Maybe also Florida's cities like Tampa and Orlando. Lots of water and nightlife there. Nashville is a little cold in Winter but is very pretty and displays American southern culture very well.

If you want something very authentically American I can't think of any other place that beats Salt Lake City, Utah. Mormon culture all around. No other city on Earth like that. ^_^

Your no snow criteria is limiting your options to the extreme southern part of the country,probably Florida..
