I like our style of pulled-pork barbecue, especially the little crunchy edgy pieces full of smoke and flavor. YUM!

I've always preferred NC's vinegar-based sauce to our syrupy sweet ketchup concoction, though.

Never had a taste for Texas beef brisket. Might as well just eat pot roast.

Barbecue = pork IMO.

Well, here's the thing - Georgia seems to prepare Barbeque in all the various styles, not just one unlike in NC where most places only serve the vinegar based style. I think our variety is what makes it all great!

Actually NC is specifically known for two types of barbecue styles that developed there (eastern style and Lexington style) and SC is home to about four different types. There is variety in the Carolinas along with their perfected styles which is why I think they are hands-down better for barbecue.

Well I've been able to get all types of varieties in both SC and GA so their about the same to me. I do prefer the vinegar based. My grandmother's family is from New Ellenton SC and their bbq is vinegar based which is probably why I prefer that kind.

This barbecue thing baffles me, not that I'm arguing one way or the other about Georgia's recent designation. Those travel sites fluctuate with the slightest breeze.

I try barbecue fairly often when traveling and have noticed that most places have gotten pretty lazy. Sauce is only part of the product. Whatever happened to slow cooking and and actual smoke? Seems a lot of what I encounter is just oven (or gas grill) roasted butt with an assortment of sauces on the side.

I believe if the main ingredient isn't flavorful enough to be enjoyed on its own, it's not good barbecue.

Georgia might have as many bad barbecue joints as good.

I do agree that the meat itself should be flavorful and shouldn't have to rely only on sauces to provide it.
