I was a little bored at work (actually procrastinating on starting a small project) and did a quick google search for "Flag Football" and "Greenville"

The search produced the following website: United Carolina Flag Football League

It doesn't appear this website has been updated in a while and the league may not exist anymore, but there is some contact info. that may help you find something.

Greenville County Recreation District has adult flag football leagues, a men's division and co-ed division:
