Thanks. I'm actually going to make some tomorrow (1st time making it with SPAM...)... but I was hoping to find a place that serves it for when we visit Oahu next month. I'm kind of a macaroni and cheese fiend.

Be sure to grill/fry your Spam before you put it into the Mac & Cheese. Simply baking the Spam inside the casserole won't give you the full flavor brought out by frying it first, and then baking it with the Mac & Cheese.

Epicures: Please hold the catcalls. Times are tough all over.

Technically it is the browning of the Spam that adds the extra flavor. It's already fully cooked, so you need only sear it until it is browned. Takes a couple of minutes in a hot pan.

But if you wanna make it more local taste, soak it in teriyaki sauce overnight, then brown it. That's what goes into Spam musubi.

Thanks for sharing the tips!

But, lucky for me (I guess...) I was a poor kid born into a white trash family growing up so I got a lot of grilled spam and mayo sandwiches on cheap white bread during my formative years. I can still hear the sizzle and smell the salty.... meat(?)! I was also fed those little vienna sausages and that canned deviled ham spread stuff (when we were feeling rich) and braunschweiger. It's a wonder I didn't sprout a tail or a third eye or horns or something.

Searing/browning SPAM really does bring out a nice salty flavor, though. I'm thinking it would really go well with the humble comforting deliciousness of mac'n'chz. I sometimes add a good bacon, all crumbled up by hand, to my homemade mac'n'chz... anyway... maybe I'll take pics and let you guys know how it turns out!

We're visiting Oahu from Eugene, Oregon. I'm a Texas native, though, but we've also lived in a few different states/places, and many different countries in my husbands case. "Home" is a relative term.

Mmmmmm...Spam Musubi!!! There's a place in Waikiki that sells it for $1 a roll. For $2 I'm stuffed.

If you're from Texas, you'll like the temperature and humidity level of Hawaii. It's like that 2 week period of Spring or Fall in Texas before the other seasons kick in. 70's and 80's, very pelasant. Plus, the Ocean is AMAZING, not stinky and brown like Galveston.

Thumbs up mmmmm...good!

I probably have about 300 recipes for mac/cheese...none of them worth
creating a second time around..but, since I just taught myself how to properly 'fry up' some SPAM...I might pull a few of those recipes out and give it a shot...
