I eat hashbrown sandwiches (vegetarian) and I always fry them using coconut oil or olive oil. I read online that frying food can lead to cancer. Does it matter what kind of oil I use? I read that vegetable oil and canola oil is bad to fry. Does this mean I can fry the oil using coconut and olive oil as many times as I want and nothing will happen, no chance of getting cancer or any other disease?

The frying and cancer connection is due to the production of Acrylamide which comes from the process of frying (nothing to do with the oil choice). I think that, as with everything, moderation is the key.

You should not fry in oils with a low smoke point, like olive oil - save olive oil for salads or relatively low temp sauteing of veggies. Coconut oil can have either a high or low smoke point depending on how refined it is.

Fried food of any kind is really not healthy on many levels. However I do enjoy fried potatoes probably weekly. Just balance it out with healthier fare.

Also beware of restaurants that overuse cooked oil. I ended up in the ER after going to a popular restaurant chain that markets itself as offering healthy food. I'm nearly 100% sure that food I ate was in oil used and reused too many times that busy Saturday night.

Used in moderation, in the home, with fresh high-heat point oil, is probably not a problem.

Check the bottles for expiration dates and shelf life. Some need refrigeration.

It's perfectly safe to fry it. It's eating it afterwards that causes the problems.

By all means avoid fried foods. Just put a wad of potatoes in the microwave until they are warm and cooked thru.

If you don't fry anything, make sure you have other fats in your diet. You need them for fat-soluble vitamins, and you might a well enjoy fried foods while you're at it. With moderation, of course.
